Description: My version of potato salad.
Ingredients: 4 sacks of washed potatoes from NTUC (one sack bout $1.30, cant remember how much each sack weighs. Prolly half kg?) 2 stalks of celery
Garlic Butter: 1 clove garlic, minced 250g butter
Salad Cream: Garlic butter 1 bottle Kraft mayonnaise A few dashes of Kraft Italian Dressing Cole's Mustard to own taste Sugar to own taste Salt and pepper
Directions: Prepare Garlic butter: This is by far the trickiest on the list but the most essential. Melt butter over very very low heat. Add in the garlic, constantly stirring. When mixture is gold and fragrant (sounds funny eh..), set aside to cool. NOTE: Butter burns easily. If mixture is burnt, if turns brownish instead of golden yellow, and the garlic butter will have a very bitter aftertaste. I burnt mine on the first try. Upon cooling, the whole mixture turned dark brown!
After that first ordeal, the rest of the steps are easy peasy!
Boil potatoes with skin til tender. Its easier to peel the skin after the potatoes are boiled. Roughly chop the celery into small pieces.
Salad Cream: Mix all ingredients into a bowl. That's all
Then... Toss potatoes and celery with the salad cream. Sprinkle with paprika before serving.

Ingredients: Spring Rolls: Some Viet rice wrappers (I used this brand: Bahn Tranh Viet Nam Thuong Hang.. Panjang kan brand tu) Prawns (peeled, deveined) Rice vermicelli aka Su'un Some Thai basil Some mint Rocket lettuce (coz its spicy but the usual lettuce leaves are fine too) Some bean sprouts (optional) Carrots (finely julienned) Nước Chấm (dipping sauce): Cloves of garlic, crushed Red birdeye chillies, sliced Caster sugar Lime juice Fish sauce (I like!) Rice vinegar Some chopped coriander (optional)
Directions: Take the ingredients you want, put it on the Viet rice paper, and ROLL!

Ingredients: Fish: Dory fish, the one with 6 per packets Rice flour Eggs Japanese bread crumbs
Coleslaw: Lettuce and Carrots, cut in small strips Shallots, diced as tiny as possible Garlic, diced as tiny as possible Mayonaise Thousand island Kraft's French Salad Dressing Lemons
1 can Baked beans
Crinkled Fries rawks my socks!
Directions: Combine all ingredients for the coleslaw. Set in the fridge to chill.
Clean the dory. Coat with the rice flour. Then eggs. Then bread crumbs. Deep fry in hot oil.
Place on plate with the chilled slaw, warmed baked beans and crinkled fries.

Description: Experimental cooking for a last minute family BBQ, hence the vague proportions of the ingredients. I gasak-gasak only.
Ingredients: 4 medium to large sized whole sotong, cleaned and de boned
Stuffings: 2 cans plain tuna
Some garlic, chopped Cracked black pepper Salt to taste
Sambal Belacan: A handful of green chillies 1 stalk red chili (or more if u want it hotter) 3 fist-sized red tomatoes, diced Belacan A handful limau nipis, or lemons
Marinating rub: Olive oil Thyme Basil A little bit of oregano Cracked black pepper Salt to taste
Directions: Prepare the marinating rub beforehand so that the flavours have time to infuse and combine.
Blend or grind the chillies and tomatoes with the belacan, like making sambal belacan. Squeeze sufficient amount of lime juice.
In a pan, saute the garlic. Add in the grounded sambal belacan. Then the tuna. Lots of cracked black pepper. Then salt to taste.
Set aside to cool before stuffing the sotong. Secure with toothpicks. Rub the stuffed sotong with the pre-prepared marinate. Grill.
DONE!
Extra sambal belacan with some more chilli padi and salad on the side .

Description: A simpler way to have ur cheesecake. And make them too. This version reduces the risk of the cheesecake burning too much at the sides and sinking in the middle. Yields a good batch of 30, depending on the size. I made mine small, about the size of the oreo cookie itself.
And since Ramadhan's here, this should be a welcoming try in lieu of the normal Syawal cookies.
Ingredients: 40gm unsalted butter 2 tbsp icing sugar, sifted 400gm cream cheese 1 cup caster sugar 3 eggs 1 vanilla pod or vanilla essence pieces of crushed oreo cookies full pieces of oreo cookies as cookie base
Directions: - beat cream cheese with butter till fluffy - add caster sugar, eggs and vanilla pod or essence - add in the crushed cookies. they will rise to the top during baking so should u decide to add in a few more handful, crushing them finer would be a good idea
- place a cookie on the bottom of the cupcake/muffin paper - spoon dollops of the cheesecake mixture onto the cookie base - bake for 10-15 mins at 170-200 C
- chill for awhile after they're baked - then decorate, decorate, decorate. try fresh strawberries and whipped cream topping.
